Cone Bread with Custard Filling Recipe (Bánh Mì Ốc Quế Nhân Kem)

Cone Bread with Custard Filling (Bánh Mì Ốc Quế Nhâm Kem) is one of my favorite dishes when I was a child. My mom and aunts usually made them in weekends. This dish comes from many delicious Vietnamese Sandwich Recipes. I bet if you have kids, they will totally fall in love like me if they have a chance to taste. Today, I want to make it for my mom. Ingredients:

500g wheat flour
200ml fresh milk (no sugar)
2 eggs
1 teaspoon salt
100g white sugar
50g butter
1 ½ teaspoons yeast bread
For Fillings: 350ml fresh milk (no sugar), 3 eggs, 70g white sugar, ¼ bowl tapioca starch or wheat flour, ½ teaspoon salt, 1 teaspoon vanilla
Pattern for making cone bread or aluminum papers.

Process:

Step 1: Making filling: Stir eggs gently in 15 – 20 minutes. Next, add tapioca starch into bowl and mix well until they combine together.

Step 2: Pour fresh milk + sugar into pot, bring to cook until sugar is melted.

Step 3: Pour the hot mixture milk into mixture eggs in step 1, stir gently and nonstop to make sure eggs will not be cooked. Then, bring this mixture to cook again in small heat. Do not stop stirring when cooking. When mixture becomes thick and boil, turn off the heat. Wait to get cold and add vanilla starch into pot. Step 4: Pour mixture egg in step 3 into nylon bag like photo below and put in fridge (on vegetable drawer).

Step 5: For cover: If you do not have cone pattern, you can use aluminum paper instead. Cut these papers into square shapes (25 * 25cm). Next, fold into triangle shapes and use your hand to create a cone.

Step 6: Cook fresh milk until it reaches 60 degree. Pour slowly yeast bread into this mixture. Wait in 5 minutes to blow.

Step 8: Pierce a hole on the center of mixture flour and add more eggs and mixture yeast in step 6. Use your hands to stuff well. Stuff until it is soft and smooth. Add slowly sliced butter and stuff more 2 minutes.


Step 9: Cover carefully this mixture by nylon bag and wait in 1 – 2 hours. Next, separate into small balls equally. Then, use nylon bag and cover each ball again, wait more 5 minutes.

Step 10: Use hands to roll them into long pieces.


Step 11: Roll gently each long piece around aluminum paper corn shape from top to bottom. Put on grilling tray. Cover carefully in 15 minutes before bring to grill.

Step 12: Stir well 1 egg with 1 tablespoon water.


Step 13: Use small brush to spread mixture egg on face of breads.


Step 14: Bring to grill at 180 degree in 10 – 20 minutes. When their faces turn brown yellow, bring it out the grilling stove. Wait to get cold, pull the aluminum paper out and add filling into breads.

Shredded Pork Skin with Bread Recipe (Bánh Mì Bì Heo)

100gr dried pork skin (Bì Khô) – Buy at Vietnamese Markets.
100gr roasted rice, grinded (Thính Gạo).

 600gr pork meat, cleaned and sliced into medium pieces.
White wine and vinegar
Spices: Fish sauce, salt, Maggi’s stuff, pepper, sugar, garlic
Scallion, cleaned and sliced small
Bread
Cucumber, coriander, scallion, carrot.
Sliced chili

Process:

Firstly, I will tell you the main ingredients to create one of stunning Vietnamese Sandwich Recipes. It is called Shredded Pork and Skin (Bì Heo). Then, wash it with wine + vinegar until reduce all its smell.

Step 1: Soak dried pork skin into water about 10 minutes.

Step 2: Boil the water, then pour dried pork skin into pot and soak about 3 minutes. Then, wash immediately in cold water. Wait to dry.

Step 5: Clean cucumber + coriander + scallion + carrot. Peel off the cover of carrot, slice long and thin pieces. Then soak it into water added a little vinegar + salt for 30 minutes before using. Slice cucumber into long and thin pieces. Next, slice coriander + scallion into short parts.

Step 6: Add 1 tablespoon oil into pan, wait to hot, add sliced scallion and fry quickly about 3 minutes. Then add a little salt before turn off the heat.

 
Finally, your dish is basically ready to serve. Cut across bread, spread a little mixture (in step 6), then add shredded pork and skin + sliced cucumber + coriander (the most important herb to create a difficult flavor for Bánh Mì Vietnam) + sliced chili + pepper + mixture (in step 6) and dipping sauce. Fried Chicken with Bread Recipe (Bánh Mì Gà)

Vietnamese Sandwich with Meat Balls recipe (Banh Mi Xiu Mai)

There are many Vietnamese sandwich recipes in Vietnam. One of popular recipes is Vietnamese Sandwich with Meat Balls. This dish is the mixture between Eastern and Western. Ingredients for Meat balls
1kg grinded pork
3 branches of sliced garlic
Fried Onion, Spring Onion (Only use white parts)
1 Cassava Fruit (220gr), sliced it small

3 tea spoons sugar

4 crispy Vietnamese sandwich
½ pinch coriander
1 sliced long pieces cucumber
Carrot, Green Papaya, mixed them with a little vinegar and sugar.
Chili Sauce or Fresh Chili (Optional)

Process:

Step 1: Mix grinded pork with sliced small garlic, fried onion, sliced small spring onion, egg, sugar, salt, fish sauce, pepper and sliced small cassava into big bowl. Please follow carefully this step, it will create a stunning main ingredients for Vietnamese Sandwich Recipes.

Step 2: Roll the mixture into balls with diameter about 4 cm
